Grape Varieties: Pinot Noir and Chardonnay.
Tasting Notes: Straw yellow color. Aroma of citrus peel, dried flowers, light toast, butter biscuit, and beeswax, among other aromatic notes with a rich and complex palette. On the palate it has a very fresh attack and excellent texture. The mousse is creamy and has good taste persistence.
Vinification: After a very delicate pressing of the grapes, harvested between mid-August and the first days of September, the must fermented for 16 days in stainless steel vats at a controlled temperature. The preparation, following the classic method, began in early April with the brewing with free yeasts, and the refermentation took place in a cellar for 26 days at 15ºC, followed by a period of ageing in the bottle, on lees, 20 months.
Ageing Potential: 2 years after dégorgement
Recommended dishes: Oysters, fish, white meat or cheese, among other delicacies. Should be served at 9-10ºC.
